Chewy energy bars that are packed full of seeds, nuts and oats; tangy cranberries and of course a little chocolate.
Super Seedy Energy Bars
Ingredients Makes: 8 bars
1 1/2 cups rolled oats
1 cup dates, pitted
1/4 cup raw almonds, roughly chopped
1/4 cup cashews, roughly chopped
1/4 cup cranberries, dried
1/4 cup chocolate chips
2 tbsp chia seeds
2 tbsp sunflower seeds, raw
2 tbsp flax seeds, ground
2 tbsp pumpkin seeds
2 tbsp sesame seeds
1/4 cup honey
1/4 cup almond butter
sea salt to taste
Rinse almonds and toast in a 350 degree F oven for 10 minutes or until slightly golden brown.
Process dates in a food processor until small bits remain (about 1 minute). It should form a dough-like consistency.
Mix together in a large bowl oats, almonds, cashews, dates, cranberries and seeds; then set aside.
Combine honey, almond butter and sea salt just until mixed. Add to oat mixture and mix well with a large spoon until evenly combined.
Transfer to an 8×8 dish or other small pan lined with parchment paper so they lift out easily.
Cover with parchment paper and press down with something flat to get them really packed tight. This will help them from being crumbly. Chill in the fridge or freezer for 15-20 minutes to harden.
Remove bars from dish and chop into 10 even bars. Store in an airtight container for up to a week in fridge or keep longer in a freezer and just take them out when wanted.
