An all-purpose tomato sauce made with fresh tomatoes and herbs. Suitable for pastas, sauces, stews and casseroles.
Seasoned Tomato Sauce
Ingredients Makes: 2 cups
2 cups stewed tomatoes or 796ml (28oz) can of diced tomatoes
2 tbsp avocado oil or olive oil
1/4 cup onion, minced
2 garlic, minced
1 bay leaf
1/2 tsp dried oregano
1 tsp dried basil
1/2 tsp sea salt
1/4 tsp lime juice
black pepper to taste
In a large skillet, heat a couple tablespoons of oil over medium heat. Add the minced onions and cook just until translucent and tender. Next add the garlic and cook until fragrant, for about one minute stirring constantly. Add the tomatoes to the skillet and break down the tomatoes with a wooden spatula. Cook tomato mixture until it begins to boil, then reduce to low heat. Add seasonings such as the bay leaf, oregano, basil, lime juice, sea salt and pepper. Reduce heat to low and allow tomatoes mixture to simmer for about 45 minutes, stirring every 5 minutes to prevent burning. When ready, remove bay leaf and add any additional seasoning until it meets acquired taste.
Use the seasoned tomato sauce with a pasta dish, stew or casserole. This sauce can be kept in the fridge for 5 days or stored in the freezer for 6 months for future use.
