Custard Apple Pie Crumble Top

 

The creamy custard filling added to the apples in this pie produce a moist center that melts in the mouth. Crumble pie toppings are an easier and healthier alternative to cookie-crusts or pie-crust tops. Crumble tops are often used on apple crisps but it also adds a nice texture on fruit pies.  

Custard Apple Pie with Pecan Crumble Top

Ingredients                                   Makes: one pie
1 pie crust, baked and prepared

Crumble Topping
1/4 cup oatmeal
3 tbsp pecan, pieces
2 tbsp almond flour -or- all-purpose flour -or- spelt flour
2 tbsp coconut sugar -or- raw cane sugar
1 tbsp cinnamon
pinch of sea salt
3 tbsp coconut oil -or- unsalted butter

1 tbsp ground flax seed
1 tbsp chia seed

Pie Filling
3 1/3 – 4 cups apples, peeled, cored and chopped in 1” chunks
2 eggs, mixed
3-1/2 tbsp yogurt, plain
1/4 cup honey, liquid
1/2 tsp vanilla
1-1/2 tsp lemon juice
2 tbsp unsalted butter
2 tbsp all-purpose flour -or- spelt flour
1 tbsp cinnamon
pinch of sea salt

Instructions
Preheat oven to 350 degrees F. Bake a pie crust as per instructions on the packaging or given by supplier.

Prepare crumble topping in a medium sized bowl starting by mixing the dry ingredients together listed under the Crumble Topping heading. When the dry ingredients are combined, mix the coconut oil or the butter into the dry ingredients until a crumbly texture forms; then set aside.

Clean, peel and chop apples, then sprinkle with 1/2 teaspoon of lemon juice and set aside.

In a large sized bowl mix the wet Pie Filling ingredients; yogurt, honey, 1/2 teaspoon of lemon juice and vanilla together, then set aside. In a small bowl now mix the dry ingredients together, then add the dry ingredients into the yogurt mixture and combine well.

Add the chopped apples to the yogurt mixture and stir to combine. Pour apple mixture into a prepared pie shell and spread out evenly with a large spoon.

Sprinkle the prepared crumble topping evenly over the apples and gently press it in around the edges of the pie crust. Bake at 350 degrees F for 50-60 minutes.

*Baking time may differ depending on the type and the freshness of the apples used.
