A mild creamy orange flavoured dessert similar to a creamsicle, that is packed with nutrition. The chia seeds form a gel around them when soaked in the almond milk and orange juice, causing the liquid to thicken reminiscent of miniature tapioca pearls.
Creamy Orange Chia Seed Pudding
Ingredients Makes: 4 servings
1 cup unsweetened almond milk * Try our How-To-Make Almond Milk recipe!
1/3 cup freshly squeezed orange juice
zest of 1 orange (best from an organic orange)
2 1/2 tbsp maple syrup
1/4 cup chia seeds
unsweetened coconut flakes
In a medium-sized bowl, mix together the unsweetened almond milk, orange juice, orange zest and the maple syrup. When ingredients are combined, then add chia seeds and mix well.
Pour into bowls or glasses and let sit 6-8 minutes. Stir again and refrigerate for 2 hours or overnight.
When ready for the dessert, mix the pudding with a fork to create a uniform consistency. If the pudding appears too thick, just add a little more orange juice until the desired consistency is reached.
Pour the pudding into selected dessert dishes and top with chopped pecans, coconut flakes and oranges slices. Enjoy!
