Soft chewy chocolate cookies with coconut flakes, oatmeal and chocolate chips.
Chocolate Coconut Oatmeal Cookies
Ingredients Makes: 25 cookies
1 cup coconut oil or 1 cup unsalted butter, softened
1 cup raw cane sugar or honey
1 egg, mixed
1 teaspoon vanilla extract
1 1/2 cups almond flour or all-purpose flour
1/4 cup cocoa powder
1/2 tsp cinnamon
pinch of sea salt
1 teaspoon baking soda
2 1/2 cups rolled oats
1 cup flaked unsweetened coconut
1/2 cup semi-sweet chocolate chips
2 tbsp flax seed, ground (optional)
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, cream together the coconut oil or butter with the sugar or honey. Next, mix in the egg and the vanilla.
In a medium sized bowl combine the flour, cocoa powder, cinnamon, sea salt and the baking soda. When the flour mixture is combined, cream into the coconut oil/egg mixture with a large spoon until well blended.
With the flour mixture and oil/egg mixture is well blended, stir in the rolled oats, unsweetened coconut flakes, and the chocolate chips. Combine until all ingredients are evenly mixed.
Drop walnut sized cookie-dough balls onto cookie sheets and flatten with a wet fork.
Bake for about 10 minutes in a preheated oven, or until lightly browned on the bottoms. Cool cookies on wire racks.
