These fritters resemble small pancakes that taste more like potato patties then cauliflower and they are delicious! These fritters are an excellent way to cook cauliflower and a great way to introduce this nutritious vegetable to fussy eaters.
Cauliflower Fritters
Ingredients Makes: 8-10 fritters
2 cups cauliflower florets
2 Tbsp all-purpose flour ~or~ brown rice flour
1/3 tsp baking powder
1/4 tsp sea salt
pepper to taste
2 eggs, mixed
1/4 cup shredded white cheddar cheese
3 Tbsp avocado oil ~or~ coconut oil ~or~ extra-virgin olive oil for frying
Directions
Finely mince cauliflower in a food processor; then transfer it to a large bowl.
In a small bowl mix together the flour, baking soda and the sea salt and a few shakes of black pepper. In a medium-large bowl mix the eggs together then stir in the flour mixture until smooth. When mixture is smooth, then stir in the finely minced cauliflower.
Heat 2 tablespoons of oil in a large skillet over medium heat.
Drop heaping tablespoons of cauliflower mixture into the hot oil; and quickly flatten with a spoon and form into little pancakes. Repeat until skillet has 4 cauliflower fritters cooking. Cook fritters for about 3 minutes per side, or until they turn a light golden brown. The fritters cook like pancakes, when bubbles begin to form on top, they are almost ready to flip. Flip carefully with a large flat flipper to prevent fritters from coming apart.
When the first batch of fritters are cooked, transfer fritters to a plate lined with paper towels. Add another tablespoon of oil to the skillet and repeat cooking the remaining fritter batter until it is all cooked.
