Shredded red cabbage and carrots are mixed with diced red onion, minced dill pickles and freshly chopped parsley to make this sweet and delicious red coleslaw mix. Creamy plain yogurt is sweetened with maple syrup and seasoned with tangy fresh lemon juice, apple cider and a light mixture of dry seasonings to make a perfect coleslaw dressing.
Red Cabbage Coleslaw in Sweet Yogurt Dressing
Ingredients Makes: 6 servings
3 cups red cabbage, shredded
3 carrots, shredded
1/4 cup red onion, finely dice
2 dill pickle, finely dice
1/4 cup parsley, chopped
2 tbsp plain unsweetened plain yogurt
3 tsp maple syrup ~or~ liquid honey ~or~ cane sugar
1 tsp lemon juice
1 tsp apple cider vinegar
sea salt & pepper to taste
1/8 tsp onion powder
1/8 tsp dry mustard
Prepare Salad Mix. Shred 3 cups of red cabbage and then transfer to a large bowl. Peel and shred 3 carrots and also transfer to the large bowl. Finely dice 1/4 cup of red onion and 2 dill pickles and then transfer to the same large bowl. Chop 1/4 cup of parsley and also add to the large bowl. With a large spoon, mix ingredients in large bowl until well combined.
Prepare Coleslaw Dressing. Whisk together in a small bowl unsweetened plain yogurt, maple syrup, lemon juice, vinegar, onion powder, dry mustard, sea salt and black pepper until smooth.
Pour dressing over the mixed coleslaw and continue to fold over and stir until dressing is well mixed throughout the salad. Cover the bowl and refrigerate for 1 hour before serving.
