Chewy nut-butter oatmeal cookies loaded with shredded coconut, dried fruit, nuts, seeds and chocolate chips. These cookies are not only delicious but they are also nutritious; energy bars only wish they were this good.
Muscle Mix Cookies
Ingredients Makes: 35 to 40 cookies
3 Tbsp unsalted butter, softened
3 Tbsp almond butter
2 Tbsp pumpkin seed butter
1 cup honey
3 eggs, mixed
2 tsp vanilla extract
1 cup spelt flour
1/4 cup ground flax seed
2 Tbsp chia seeds
2 tsp cinnamon powder
1/2 tsp sea salt
1/4 cup semi-sweet chocolate chips
1/4 cup dried cranberries or raisons
1/4 cup walnuts or pecans, broken in small pieces
1/3 cup unsweetened coconut, flaked
2 cups oatmeal flakes
Adjust oven rack to center of oven to prevent burning the bottom of the cookies. Turn oven on to 325 degrees F (165 C).
In a large bowl cream together the butter, almond butter, pumpkin seed butter and honey. Then stir in mixed eggs and vanilla extract.
In a separate bowl combine flour, ground flax seed, chia seeds, cinnamon powder and sea salt. Then combine the flour mixture into the creamed mixture. Next, add the chocolate chips, cranberries, nuts, coconut and oatmeal, and then mix just until blended.
Prepare cookie sheets by rubbing a thin layer of coconut oil on them with just a sprinkle of flour. Drop walnut-size spoonfuls on cookie sheet 1.5 to 2 inches away from the edges; and lightly flatten with a wet fork. Bake 12 to 14 minutes in the preheated oven. Allow cookies to cool for 5 minutes before moving to cool completely on a rack.
