Mixed Greens and Herbs Salad

Mixed salad greens and herbs create a very attractive and flavourful salad which is served with sunflower seeds, berries and sliced cucumber. This salad is best enjoyed with a balsamic vinaigrette dressing.

Mixed Greens and Berry Salad

Ingredients                              Makes: 4 servings
4 cups mixed salad greens
1/4 cup fresh parsley, de-stemmed and chopped
1/4 cup fresh mint, de-stemmed and chopped
3 Tbsp fresh cilantro, destemmed and chopped
1/4 cup cucumber, peeled and thinly sliced
2 Tbsp unsalted sunflower seeds
1/4 cup fresh berries (raspberry or blackberry)
1/2 cup balsamic salad dressing *See recipe link below

In a large bowl gently combine the mixed salad greens, de-stemmed herbs, sliced cucumber, sunflower seeds and berries. Gently mix in the salad dressing and then serve immediately.
