A mixture of vegetables cooked in a spicy sauce that includes minced garlic, diced ginger, minced jalapeño pepper, soya sauce, sesame seed oil and honey.
Ginger Vegetable Stir-Fry
Ingredients Makes: 6 servings
2 Tbsp avocado oil, coconut oil or olive oil (for cooking)
1 Tbsp of purified water
1 red onion, thin slice into 2-inch lengths
4 garlic cloves minced
2 Tbsp ginger, minced
1 to 2 jalapeño peppers, minced
1 green pepper, thin sliced 2-inch lengths
2 carrot, thin angled slices
3 celery stalks, sliced
6 crimini mushrooms, sliced
20 snap peas or snow peas, tip ends cut off
1/2 cup broccoli, cut into small florets
1/4 cup broccoli stem, peeled and sliced (optional)
1 Tbsp sesame seed oil
3 Tbsp soya sauce
1 Tbsp honey
Prepare all of the vegetables by cutting, slicing, dicing and mincing as needed. Place cut vegetables together in a bowl.
In a large skillet, heat oil over medium heat before adding cut vegetables and 1 tablespoon of purified water. Cook vegetables over medium heat, stirring often for about 4 to 5 minutes or until carrots and broccoli florets begin to soften but still crisp.
Add 1 tablespoon of sesame seed oil and 3 tablespoons of soya sauce along with 1 tablespoon of honey. Season vegetables with sea salt to taste and mix to combine. Cook for 1 more minute then remove from heat. Serve immediately with rice or noodles.
