A simple garlic and herb tomato sauce that is suitable to use as a pizza sauce or for bruschetta bread.
Garlic and Herb Pizza Sauce
Ingredients Makes: sauce for two pizzas
2 cups plain stewed tomatoes *
1 tbsp honey
2 tbsp extra-virgin olive oil
1-2 garlic cloves, finely minced
1/2 tsp sea salt
1/2 tsp dried basil
1 tsp dried oregano
1/2 tsp onion powder
1/2 tsp dried rosemary
black pepper to taste
Cook stewed tomatoes until a good saucy consistency develops. In a medium saucepan over medium-low heat add 1 tablespoon of olive oil, the stewed tomatoes and the honey. Cook the tomatoes until any extra liquid is cooked out and a thick tomato sauce consistency forms, then remove from heat and cover. Stir the tomatoes occasionally to prevent burning as well chop any tomato chunks with a spatula for a smooth sauce.
Add the garlic and herb seasonings. Add the seasonings to the sauce which include the sea salt, basil, oregano, rosemary, onion powder and black pepper. Mince the garlic cloves and include this also to the sauce. Stir to combine ingredients. Return sauce to low heat and cook for15 to 20 minutes to allow flavours to blend. Give it a final taste test and add any more seasonings to suit taste; as well cook down any new added moisture that may have formed until a thick saucy consistency is created.
Spread this sauce on bruschetta bread or pizza crusts prior to layering with your choice of toppings and baking. Enjoy!
